Grilled Shrimp and Vegetables Skewers

Ingredients (for two):
  • 10 large fresh prawns, peeled and deveined (We used our favorite, Kauai Shrimp™)
  • 1 red onion cut into 1 1/2 inch pieces
  • I red bell pepper cut into 1 1/2 inch pieces
  • I golden bell pepper cut into 1 1/2 inch pieces
  • 8 pieces pineapple chunks each cut into 1 1/2 inch pieces
  • 3 Tbs coconut oil
  • 3 Tbs. 'Anakala Lu`au Coffee Rub & Seasoning
Directions:
  • If using bamboo skewers soak them in water for an hour to prevent them from burning on the grill.
  • Use two for each as it helps keep the food from spinning and falling off while cooking.
  • Skewer the fruit and vegetables.
  • Peel and devein the shrimp and skewer.
  • Brush them with the oil and cast   'Anakala Lu`au Coffee Rub & Seasoning generously onto them.
  • Chill for 30-40 minutes to allow the rub to tenderize and work into the skewers.
  • Meanwhile prepare the grill and when ready lay on the vegetable skewers and shrimp skewers.
  • If you want your vegetables more grilled, start them first, before the shrimp.
  • Grill on one side for approx.
  • 2-3 minutes, then turn and finish cooking.
  • The shrimp should be fully pink on both sides.
