Ingredients:
- 2 Boneless rib-eye or New York strip steaks (1 ¼ - 1 ½ inches thick)
- Aloha Spice Company Paniolo Steak Seasoning & Rub
Optional:
- 1 t. olive oil, or vegetable oil
- Kiawe or Guava wood chips – if using a charcoal grill https://www.hawaiiguava.com/
Directions:
- About 20 minutes before grilling, remove the steaks from the refrigerator and let sit, covered, at room temperature.
- Season the steaks liberally on both sides with Aloha Spice Company Paniolo Steak Seasoning & Rub. Alternatively, you can brush a small amount of olive or vegetable oil on the steaks before coating with the rub.
- Let steaks sit for 5-10 minutes before placing on the grill.
- If using a charcoal grill, heat coals until glowing red. For a gas grill, heat your grill to high.
- For a delicious smoky flavor, try using Kiawe or Guava wood chips.
- Place a few wood chips on the coals.
- Once they begin to smoke, move the wood to a cooler side of the grill before adding your food.
- Place the steaks on the grill and cook until golden brown and slightly charred, 4 to 5 minutes.
- Turn the steaks over and continue to grill 3 to 5 minutes for medium-rare (an internal temperature of 135 degrees F), 5 to 7 minutes for medium (140 degrees F) or 8 to 10 minutes for medium-well (150 degrees F).
- Transfer the steaks to a cutting board or platter, let rest 3-5 minutes before slicing.
