Not just chicken. PORK!
In Iowa we have access to extremely high quality pork products from responsible stewards. Pork chops, pork loins, they all get Aloha spices and I use a 125 year old cast iron skillet that was passed down to blast the chops (bone-in or boneless) and coat/sear the loins. So moist, so much flavor! Take the time to learn about dry-brining chops, steaks, roasts, etc. When I cook for people they ooh and aah.
