Steamed Mahi Mahi in Cabbage
Ingredients:
- 4 3oz pieces of skinless mahi mahi
- 2-3 Tbsp coconut oil for the fish and the wrapping
- 3 Tbsp Aloha Spice Kauai Aloha Coffee Rub
- 4 Leaves of Chinese or Napa Cabbage
- Salt
Directions:
- Oil the fish and season with Kauai Aloha Coffee Rub, let marinate in refrigerator for one hour
- Bring a pot of water to boil, add some salt
- Add cabbage leaves to boiling water; cook for 30 seconds to a minute, or until just wilted
- Remove from heat; Cool quickly by plunging leaves into ice water for 1 minute, remove from ice water, pat dry
- Wrap the fish in cabbage leaves and brush lightly with the coconut oil.
- Steam to doneness, approx. 10 minutes
- Arrange on a platter with a bowl of dipping sauce.
Hot and Sweet Dipping Sauce
Ingredients:
- 1/2 cup water
- 4 Tbsp lemon juice
- 3 Tbsp sugar
- Pinch of crushed saffron
- 1 tsp chili flakes
- 1 clove garlic, minced
- 2 Tbsp chopped coriander leaves
- 2 Tbsp chopped fresh mint
- Aloha Spice Kiawe Smoked Garlic Hawaiian Sea Salt to taste
Directions:
- Combine all ingredients in saucepan
- Simmer 5 minutes.
- Chill to room temperature. Serve.
