Blend butter, brown sugar & honey. Add egg and vanilla. Mix well.
Roughly chop the Trail Mix (optional).
In separate bowl, combine all dry ingredients except the Trail Mix.
Add dry ingredients to wet ingredients. Mix until combined. Fold in 2 cups Anahola Granola Trail Mix. Set aside ½ cup Trail Mix to top cookies.
Cover and refrigerate cookie dough for 2 hours or overnight (optional).
Preheat oven to 350˚F. Grease baking sheet or line with parchment paper. Scoop dough into ball (approx. 2 tablespoons in size). Press some Anahola Granola Trail Mix onto the top of each ball. Place on baking sheet and flatten slightly. Bake for 9-11 minutes or until golden brown. Remove cookies and place on wire rack to cool. Enjoy!
